特性
多年生草本植物，高約30~45公分，植株簇生呈叢狀。葉細長，中空，具有新鮮、清淡的洋蔥味。種子播種後第2年可開紫粉紅色的球狀花。“蝦夷蔥”可增進其他料理的香味，與“青蔥”、“馬約蘭花”和“龍艾”混合，味道特別佳。

栽培要點
種子直播，10公分盆可播10~15粒種子，上面再稍微覆蓋，保持濕潤，約7~10天發芽。發芽後讓幼苗盡速接受陽光，以免徒長。喜全日照環境，土壤以富含有機質、排水良好的微酸性土壤為佳。花謝後將植株修剪至5公分高，促進新葉產生。施肥：種植前酌量施用“滿地王有機肥”混入土壤中作基肥，生育期施用營養肥如“葉綠精”做追肥；開花期施用“康普花精”等開花肥。

用途
從基部切取葉片和剛開的花朶，可料理沙拉、蔬菜、雞鴨肉、魚、湯、蛋、乳酪、奶油、醋和調味料等。鮮花可做花束，乾燥的花可做花環和其他手工藝品。葉子有促進食慾和幫助消化之效，葉子的浸泡液可驅除蚜蟲和殺菌。
